13 Tropical Drinks

Thirteen Tropical Drinks

Next week I will be having a chat for my favorite charity, Freeport Humane Society. I will pledge $1.00 for every guest that comes. In celebration of Dark Waters, here are a few drinks island style to mix up before the soiree. Didn’t get your evite? Contact me.

1…. Puerto Rican Pina Colada

1 cup pineapple juice
1/2 cup cream of coconut
1/3 cup Bacardi® white rum
1 cup crushed ice

Combine ingredients in a blender. Blend until desired consistancy, pour into a Champagne Tulip and serve.

***

2… Caribeean Martini

1 1/2 oz Stoli® Vanilla vodka
3/4 oz Malibu® coconut rum
1 splash pineapple juice

Shake ingredients over ice. Pour into cocktail glass.

***

3… Mojito

3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lime slice and the remaining mint, and serve.

***

4… Captain’s Paradise

1 part Captain Morgan® Parrot Bay pineapple rum
1 part Tropicana® orange juice

Combine them how ever you want in whatever you want. I always pour the orange juice first then the rum but its up to you. This actually makes a great punch too. The ratios can be changed depending on how strong you want it, but I find this has a relatively solid balance. Both guys and girls will really enjoy this!

***

5… Pineapple Bugunda

2 cups fresh pineapples
4 tbsp brown sugar
1/2 cup light cream
6 oz white rum
1 tsp vanilla extract
1 cup crushed ice

Cut the pineapple into small pieces, enough for two cups. Combine with everything else in a blender until smooth and thick. Serve in whiskey-sour glasses and garnish with mint sprigs and maraschino cherries.

***

6…. Coquito (Rum Punch)

1/2 liter water
15 oz cream of coconut
12 oz evaporated milk
14 oz condensed milk
4 egg yolks
2 – 3 cinnamon sticks
1 liter white rum

Boil the cinnamon sticks in the water. Take the sticks out when the water is yellow and has the smell and taste of cinnamon.

Add the evaporated milk, condensed milk and egg yolks and cook at low temperature. While it’s cooking stir to avoid it sticking to the bottom of the pot. When it is boiling for a few minutes, add the cream of coconut and rum. Stir well and take off the burner.
Let it cool and it will be ready. Keep it in the refrigerator and it will last for a very long time.

***

7… Cruz Azul (shooter)

1 oz 151 proof rum
1 oz Bacardi® Limon rum
1 oz Absolut® Citron vodka
1 oz Rumple Minze® peppermint liqueur
1 oz Blue Curacao liqueur

Stir and serve in a shot glass.

***

8…. Sex with an Alligator

sweet and sour mix
Midori® melon liqueur
1/2 oz raspberry liqueur
1/2 oz Jagermeister® herbal liqueur

Add sweet and sour & Midori to a shaker w/ice, shake and strain. Layer in razzberry liqueur and jager. Razzberry should go to the bottom and jager should float on top. Works best in Martini glass.

***

9… Sex on the Beach

1 1/2 oz vodka
1/2 oz peach schnapps
2 oz cranberry juice
2 oz orange juice

Add vodka and peach schnapps to a highball glass over ice. Fill with equal measures of cranberry juice and orange juice, and stir.

***

10… Mango Daiquiri

1 oz dark rum
1/4 oz Orange Curacao liqueur
3 oz mango chunks
1 1/2 oz sweet and sour mix

Combine the rum, orange curacao, mango pieces and sour mix in a blender with one cup of crushed ice. Pour into a tall glass, garnish with a mango stick and serve.

***

11… Island Breeze

1 1/2 oz peach schnapps
1 1/2 oz DeKuyper® Sour Apple Pucker schnapps
1 splash grenadine syrup
4 oz pineapple juice
1/2 – 1 oz Sprite® soda

Stir all ingredients together in a highball glass. Add ice as desired, and serve.

***

12… Paradise

1 1/2 oz gin
1 oz apricot brandy
2 oz orange juice

Shake and strain into a champagne saucer. Garnish with the blossom of a white orchid and a cherry on a stick.

***

13… Coconut Kiss (non-alcoholic)

1 oz cream
3/4 oz coconut cream
1 1/2 oz cherry juice
1 dash grenadine syrup
1 1/2 oz pineapple juice

Shake over ice cubes in a shaker. Strain into a large highball glass over crushed ice, garnish with an amarelle cherry, and serve.

You had me a pina colada  . Seriously though, I’m going to have to try mojitos, they sound yummy, so do the Coconut Kiss. I’ll try and make your shindig, but I work Thursday nights and get home around 9:30 (how long do you think it will last?). Happy TT.
P.S. Where did you get your smilies?

Bacardi rum?! Tsk…tsk…tsk… A good Puerto Rican will only use Don Q rum for a good piña colada.

I’m not a big fan of drinks that actually taste like alcohol, so I guess I’d have to stick with #13.

Thats a different recipe for a Coconut Kiss than the one they serve at a bar here. It doesn’t taste alcoholic but it certainly has enough booze in it to get you drunk :-)
